Tomato Sauce that Kids Love

Simple Tomato Sauce

For a few Years, every Weekday I catered for 40 Children at a Kindergarten here in Freiburg. Their Meals were always Seasonal, Vegetarian, and Organic. Tomato sauce was an all time Classic. As I made it again on the Weekend for my 3 Year Old Housemate, she loved it so much she held the Plate up her face to it Lick it clean! Now that is just the best Compliment a Chef can receive. The Sauce is not just for Kids though!

This will give you about 6 -8 Portions, but my advice is to make an even bigger Batch and Freeze some. It also will keep for a few Days in the Fridge. Once you have the Basic Sauce you can enjoy it with Pasta or Gnocchi, or use as a Basis for a Chili, or add some Roasted Vegetables, or turn it into a Bolognese….

If your Children don’t like to know there are any Vegetables in it, and you struggle to Chop the Onion and Garlic fine enough, just Blend the Sauce at the End.


Ingredients

1 Medium Onion

1 Garlic Clove

2 Tbsp Balsamic Vinegar

1 Tsp Sugar

680 g Tomato Passata, or Chopped Tomatoes

Salt to Taste

A little Olive Oil


Method

Peel and finely Chop the Onion, peel and finely Chop the Garlic. Use a relatively high Saucepan, as later the sauce might Sputter when it gets hot. Place on a medium Heat, add a good Splash of Olive Oil, and Sauté the Onions until they are Translucent. Add the Garlic and Sauté for a further 30 Seconds.

Add the Balsamic Vinegar and let it Reduce down before adding the Sugar, and then the Passata. Bring to the Boil and then reduce the Heat and allow to simmer for at least 30 Minutes. The Sauce will reduce down and become more intense in it’s Flavour. Season with Salt to your Taste.
