Rosemary, Chilli and Lemon Cashews

It has officially started, the countdown to Christmas is upon us and even if this year will be nothing like we could have imagined or would have wished for, there are still so many wonderful things happening around us. As I write this blog post I’m listening to a beautifully recorded advent’s jazz mix CD, which I received on day number 2 of my all ladies advent’s calender. A great idea from a friend of mine. 25 ladies who each chose a day leading up to Christmas with one lady being the ‘joker’ as it were. We were then to create, make, write, bake, or record a little something 24 times, wrap it up, and then exchange to create a very unique and individual advent’s calender. The ‘joker’ lady is the gift you will open on the day you created a gift for. Obviously, I would do something that could be eaten 😉 I chose to do marinated roasted Cashews, with Rosemary out of our garden, Lemons and Chilli. I included a recipe so that, should the ladies wish, they could make again for themselves or indeed give to someone else as a little savoury treat. These nuts are great with a gin-tonic, or any other aperitif! Make for yourself, to share with your family, or to give as a gift.

Makes 6 mini Jars Jars


Ingredients

300 g Cashew Nuts

3 Stems of Rosemary

1/2 Tsp salt

1 Tbsp Sunflower Oil

1/2 Tsp Chilli Flakes, or more to taste

1/2 Lemon, just the Zest

2 Tsp Lemon Juice


Method

Preheat the oven to 160 °C. Separate the Rosemary Needles from the stems, and finely chop the Rosemary. If you have a pestle and mortar put all the ingredients except for the Cashew Nuts and the Oil into it and create a fine paste, add in the Oil and then mix together the cashew Nuts with the marinade in a bowl. If you don’t have a pestle and mortar, mix all the ingredients together in a bowl. Cover a large baking tray with baking paper, spread out the Nuts and bake in the oven for about 18 minutes, turning the Nuts regularly, until they are a golden brown. Allow to cool. Store in an air tight container, if they don’t get eaten straight away.
