
This is a quick and easy Side Salad, that is crunchy, sweet and unique. Serve with a Green Salad or as a Side Dish to your lunch or Dinner.
Ingredients
170 g Courgette
40 g Dates
1 Tsp Nigella Seeds
1 Tsp Salt
1 Tbsp White Wine Vinegar
1 Tbsp Oil, I use a mild Rapeseed Oil
Freshly Ground Black Pepper
Method
Wash the Courgette, cut it lengthways in quarters, and cut out the soft middle part. Then slice the Quarters into thin Slices and put into a Bowl.
Thinly Slice the Dates and add them to the Bowl. In a Frying Pan, add the Nigella Seeds and dry Roast them over a medium heat for 2 Minutes. This will release their Oils, and give a nicer Flavour. Add the Seeds and the rest of the Ingredients to the Bowl and mix well. Serve straight away.

Well done, Hannah! I made this tonight to go with a homemade pizza and green salad and it was delicious, yet so easy. I even used our own nigella seeds!
